Sauveterre-de-Rouergue is a very small fortified village of 888 souls established in 1281. Nestled on the hills of the Aveyron region of southwest France, it features half-timbered houses with corbels, sculpted ornamental stones, ornate doorways, remains of the fortifications, moats, and tower archways. Sauveterre was voted as one of the "Plus beau village de France" One of the most beautiful villages of France. The village was known for its outstanding knives during the 15th and 16th century. Mr. Vialis has recreated the original using the best material the 21st century has to offer.
The Cutlery is located in the center of the town within La Bastide "the center plaza" and has only four cutlers handcrafting these wonderful knives. Every knife is entirely handcrafted by one of those four craftsmen from beginning to end.
The Aveyron region is also known for its famous Roquefort cheese and the celebrated Laguiole knives.
This knife is available with a full handle or with solid brass or stainless front bolsters. The blades are forged of the best stainless steel available "12C27". Handle materials available are: French Olivewood, South American Snakewood (Amourette in French), Black and Blonde Horn tip (African zebu), and finally Eastern European Elk stag.
